Baking though is another story. There is something therapeutic about the mixing of delicious ingredients into a beautiful smooth batter, pouring it into a tin and watching it rise in the oven. To be fair though this lemon & coconut cake doesn’t rise much at all – it is low carb and keto friendly so there is no self-raising flour in sight.
I adapted this recipe from Ditch the Carbs slightly. I used shredded coconut instead of desiccated and added some chopped walnuts just because I had them in the house.
If you’re not following a low carb or sugar free lifestyle then I would most definitely be adding some white choc chips to this cake, because you know, chocolate.
